Alvear Pedro Ximenez 10 year old vinegar is made from 100% Pedro Ximenez fortified wine from the D.O. Montilla-Moriles, and then kept for another five years in American oak casks in a Solera and Criaderas system with a regular blending from cask to cask. This vinegar has a dark mahogany colour with a very intense nose and aromas typical for the fortified wine from which it is made. On the palate, the acidity is tempered and smoothed by the long stay in old oak casks.
Ideal as an ingredient in cold and warm sea-food salads, meat dishes and pickles.
